So.. one day I woke up and thought, I fancied having sausage, eggs, and maybe some cheese to go on top.
Omelette….
I thought about making a typical western style omelet with sausage and cheese, but I was feeling more adventures than that!
Sri Lankan omelets provide me with that fresh oniony flavour combined with agg, with a little bit of kick added by chilli. Its a great way to add a bit of freshness to your Omelette. Sausages allow for adding another layer of flavour to the omelette that compliments the rest of the flavours.
Serves 1.
Ingredients
- 3 x Eggs
- 1/2 Red onion (chopped)
- 2 Curry leaves
- 2 x cooked sausages (shopped into slices/cubes) — using Polish sausages in pictures below.
- 1 x Fresh chilli (shopped)
- Butter for frying.
- Salt to taste.
- Pepper to taste.
- Grated cheese.
Methods
1. Mix eggs, salt, pepper, 1/2 of grated cheese, and chopped onion together in a container.
2. In medium heat fry the chillies, curry leaves in butter until chillies become soft (3–5 mins).
3. Add sausages to the chillies and fry for another 2 mins.
4. Add the egg mixture into the frying pan and mix well with chillies and sausages quickly before the egg mixture gets cooked.
5. As the egg mixture gets cooked and set, sprinkle rest of the cheese on top.
6. Once, the bottom side of the omelette is cooked, flip it in half.
7. Take the omelette out of the pan when both sides are cooked.
