Who likes a burrito inside a pie?โ€ฆ ๐Ÿ‡ฒ๐Ÿ‡ฝ + ๐Ÿ‡บ๐Ÿ‡ธ๐Ÿ‡ฌ๐Ÿ‡ง

Ingredients

Shortcrust pastry dough

Pie foils/dishes/tins

Beef Filling

  • Sunflower/Vegetable/Rapeseed oil: 1 tbsp
  • Onion (finely chopped): 1
  • Garlic Cloves (very finely chopped): 3
  • Ground Cumin: 1 tbsp
  • Ground Coriander: 1 tbsp
  • Cayenne Pepper: a pinch or more to taste.
  • Dried Oregano: 1 tsp
  • Beef Mince: 250 g
  • Golden Caster Sugar: a pinch
  • Wine Vinegar/Cider Vinegar: 1 tbsp
  • Chopped Tomatoes: 200 g
  • Black Beans or Kidney Beans, with the can water: 200 g

Mexican Rice

  • Olive Oil: 2 tbsp
  • Yellow or White Onion: 2
  • Garlic: 4 cloves
  • Red Bell Pepper: 1
  • Jalapeno: 2
  • Long Grain White Rice: 256 g
  • Cumin: 1 teaspoon
  • Salt and Pepper: to taste
  • Tomato Sauce: 470 ml
  • Vegetable or Chicken Broth: 470 ml
  • Chopped Coriander/Cilantro: 2 tablespoons for garnishing

Method

Beef Mixture

  1. Heat the oil in a large pan
  2. Fry the onions for 8 mins. Add garlic, spices and oregano and cook for 1 minute.
  3. Add mince into the pan, break into pieces and fry for 5 mins (or until browned)
  4. Stir in the sugar and stir for 1 minute, then splash in the vinegar and pour in the tomatoes. Simmer for 5 mins.
  5. Add the beans and the water from the can into the mixture. Stir Well.
  6. ๐Ÿ‘… Taste and season ๐ŸŒค.
  7. Stir and simmer everything for 20 mins until the mixture thickens into a thick gravy.

Rice

  1. Heat oil in a large saucepan over medium heat, then add rice.
  2. Stirring constantly, cook until golden ๐Ÿฅ‡.
  3. While rice is cooking, sprinkle with salt and cumin.
  4. Stir in onions and cook until soft and tender ๐Ÿคฑ.
  5. Stir in tomato sauce and chicken broth; bring to a boil.
  6. Reduce the heat to low, cover and simmer for 20 to 25 minutes.

Pie Assembly

  1. Preheat the oven 200 degrees celsius.

2. Place the dough in the pie tin and make sure that the dough touches the whole internal surf๐Ÿ„โ€โ™‚๏ธace of the dough.

3. Place baking beans on top of the dough in the tin/dish/foil, making sure the beans touch the whole of the surface of the dough.

4. Bake the tins with baking balls in the oven for 15 minutes, or until the dough becomes golden brown.

5. Take the tins out of the oven, and remove the baking beans.

6. Stack the bottom layer, 2/5 of the height of the pie with rice.

7. Add a layer of grated cheese, filling 1/5th of the height.

8. Finally fill the rest of the pie with (2/5th) the beef ๐Ÿ„ mixture, filling the pie to the top.

9. Cover the top of the pie with a sheet of dough, and seal the edges (by pinching) with a folk or with your fingers๐Ÿ‘‡, sticking the new/top layer of dough to the bottom layer of (par baked) dough surrounding the pie.

10. Put the pie back in the oven and cook for another 30โ€“40 minutes โฑ or until the pie/dough cooks and becomes golden brown.

11. Once, cooked. Take the pies out and leave to rest for 5 minutes before serving โ™จ
